Preheat oven to 350 degrees. Prepare your baking sheets with parchment paper and place them aside.
Add 2 cups of flour, 1 teaspoon of baking soda, and 3/4 teaspoon of salt to a small bowl. Whisk together.
In a stand mixer bowl, add 3/4 cup of room temperature butter, 3/4 cup of brown sugar, and 1/2 cup of sugar. Set mixer to a medium-high speed and mix until light and fluffy.
Add 1 egg and 1 teaspoon of vanilla extract to the stand mixer while continuing to let it run.
Change to a low speed and gradually pour in flour mixture.
Use the cookie dough scooper to scoop out dough, and place them on the cookie sheets. They should be 2 inches away from each other.
Put the cookie sheets into the oven and bake for 9-19 minutes or until the edges are golden brown. Then cool for 5 minutes.
