If you were to use a hand mixer with regular whisk attachments, the dough would get stuck and the ingredients wouldn’t be able to incorporate. Instead, use an electric stand mixer with a paddle attachment.

2. If you want to add a topping, add white chocolate chips.

As you will see, we put raspberries on top of the cookies. Although they tasted great, they had to be eaten right away because the raspberry juice seeped into the cookie and made it soggy.

Using white chocolate chips still adds a nice touch, without the possibility of the cookies breaking apart easily later on.

3. Equally space the cookie dough two inches apart.

We tried to make more room by squishing some of the cookies together, but instead, they ended up baking into each other. Depending on the size you make the cookie dough balls, you may need to use three cookie sheets.

This recipe makes a lot of cookie dough, so keep that in mind when preparing your cookie sheets.

4. Sift the brown sugar and granulated sugar.

More common in brown sugar but sometimes found in granulated sugar, it tends to clump up and stay like that when mixing it into the dough.

And ingredients you will need:

2 cups of flour

1 teaspoon of baking soda

¾ teaspoon of salt

¾ cup of butter at room temperature

*If the butter is coming straight out of the fridge, put it into the microwave for about 15 seconds to get it to the right consistency.*

¾ cup of brown sugar

½ cup of granulated sugar

1 egg

1 teaspoon of vanilla extract

1 cup of white chocolate chips

12 oz of fresh raspberries (about 1 ½ cups)

*Make sure to wash and thoroughly dry the raspberries before adding them to the dough.*

After you’ve gotten all of your materials and ingredients out and prepped, you can move on to the steps it will take to create this delicious cookie!

Step 1:

Preheat the oven to 350 degrees. Set out your three cookie/baking sheets and place parchment paper on each of them. Put them aside while you make the dough.

We used a convection oven for our recipe, so when you put your baking sheets into the oven, watch over them and add more time if needed. 

Step 2:

In a smaller bowl, add 2 cups of flour, 1 teaspoon of baking soda, and ¾ teaspoon of salt. Whisk together until everything is fully incorporated then set aside. 

Step 3:

In the stand mixer bowl, add ¾ cup of room-temperature butter, ¾ cup of brown sugar, and ½ cup of sugar. Connect to the electric mixer and set it to a medium-high speed until the texture of the ingredients is light and fluffy.

This should take about 3 minutes, but depending on the power of your mixer it could take more or less time.

Step 4:

Add an egg and a teaspoon of vanilla extract to the stand mixer bowl, and mix together on a medium-high speed. Continue to mix until the dough is smooth, this should take about 1 minute.

You may also have to use a spoon spatula to scrape the sides of the bowl in between mixing.

Step 5:

Gradually pour in the flour, baking soda, and salt mixture and change the stand mixer to a low speed. If the mixture continues to blow out of the bowl, add smaller amounts at a time or completely stop the mixing process to add in more.

At this step, you will need to turn off the mixer a couple of times to scrape the sides of the bowl, because with the thicker consistency the paddle tends to push the dough up and out. 

Step 6:

Separate the bowl from the electric mixer, and pour in 1 cup of white chocolate chips. Then fold those into the dough with a spoon spatula.

Then take your washed and dried raspberries and add them into the dough a half cup at a time. Fold these in as well. 

Once everything is folded in, scrape the sides and prepare to scoop them.

If you prefer less of a raspberry taste, then you can add less to the dough. However, you don’t need to make up for the smaller amount of raspberries with white chocolate chips.

The amount of a cup of white chocolate chips is fine, and because you are adding raspberries as well, the cookie dough needs enough room to incorporate both ingredients.

This means that you also won’t need as many raspberries, so instead of 12 ounces, you could use 8 ounces. 

Step 7:

Use your cookie dough scoop to scoop out tablespoon-sized sections of cookie dough and place them on the baking/cookie sheets with parchment paper. Each section should be about 2 inches away from each other.

Unless you use a smaller scooper, you will have more room for the last cookies on the third baking sheet. 

Step 8:

Put the cookie dough into the oven and let them bake for 9-12 minutes or until the edges are golden brown. After you pull them out, let them cool for 5 minutes. 

They can be put away in a container and do not need to be stored in the fridge. 

If you don’t plan on making them right away, you can put the cookie dough into the freezer for later use. 

Step 9:

  • Put the cookie sheets into the oven and bake for 9-19 minutes or until the edges are golden brown. Then cool for 5 minutes.
