The Best Flourless Banana Muffins Of 2024
Starting off with my personal favorite from the recipes that are already out there is these flourless banana muffins.
Not only are they super moist, but they taste super sweet because of the banana and are one of the easiest recipes to clean up after.
You mix everything together in a blender so you don’t end up with a ton of dishes afterward, and from start to finish it only takes you about 30 minutes.
If you are gluten-free, you should definitely try this recipe out. Or even if you are not, this may still end up being a new favorite.
It has been a frequently made recipe in my kitchen, and I end up eating them not just for breakfast, but also as a snack and for dessert.
They can be made as regular-sized or mini muffins depending on you, I personally like mini muffins more because I like bite-sized things, but that also means that I have to take more than just one.
While this doesn’t sound bad, it can be a problem because I end up just continuing to take more because they are just so good.
Keep in mind that the baking times for a regular size and mini version are slightly different.
Mouthwatering Banana Granola Muffins Recipe
Another banana muffin that I enjoy is these banana granola muffins. I would have thought that adding granola to batter would not change the resulting texture but it made the muffins sweeter without giving a crunchy consistency.

These strawberry muffins are up there with the flourless banana muffins as one of the top muffin ideas for breakfast that I go to and are in constant rotation.
The taste of the strawberry pears is so perfect with the flavors and spices put into the muffin that they just melt in your mouth.
On a scale of being super easy to challenging, I would say this one is still easy but not as simple as the other two banana muffin recipes.
This is mainly because it uses more ingredients and kitchenware than the other ones, which may result in you spending more time on its completion.
If you don’t mind that, then these are a super delicious and fairly light breakfast option that you can take with you in the car or at your desk while you’re working.
I think this is part of the top three out of all of my favorite muffin recipes that I’ve tried!
Bakery Muffin Recipes To Make At Home
Getting to the end of the list is one that I would consider a little more fancy, only because of its name and title. At its core, it is the best blueberry muffin recipe I have ever made from home.
It tastes fresh out of a bakery and feels like one of those classic muffins that you would buy while getting your coffee or tea.
If that is what you’re looking for, then these muffins would be perfect for you. Making them will take a little bit of time and leave you with more than enough to last a week, but they are so delicious that I’m sure you will be able to finish them all before they go bad.
These blueberry muffins also taste great as a dessert paired with whipped cream or vanilla ice cream, if you need some extra ideas to eat them with.
Finally, the newest addition to the growing repertoire of muffin recipes is these super yummy and surprisingly easy-to-make coconut muffins.

This recipe turned out so moist and delicious, I tweaked the ingredient amounts just a little bit to fit my preferences but they still came out amazing.
I was able to shorten the amount of time they needed to be in the oven by turning them into mini muffins, which you can also do if that works better for you.
The taste does remind me a lot of coconut macarons but with a spongy texture and other flavors besides just shaved coconut.
Without further ado, let’s get into the recipe! these are the ingredients you will need:
⅓ cup of melted virgin coconut oil
1 cup of coconut milk at room temperature
3 tbsp of granulated sugar
2 eggs
1 cup of flour
1 ½ tsp of baking powder
A pinch of salt
Shredded coconut
While it may seem very tempting to start this recipe without prepping the ingredients before, it is absolutely necessary to emphasize that the coconut milk must be at room temperature.
I originally made this mistake, and it ended up setting me back a couple of minutes. The temperature determines whether or not the coconut oil holds its form.
You must leave the coconut milk out until it is at room temperature or at least heat it up a little bit after taking it out of the refrigerator so it is not super cold.
Once you have prepared all the ingredients, you can move on to the steps.
Step 1:
Preheat the oven to 375°. Prepare two mini muffin pans and coat them with a non-stick cooking spray. Set them off to the side.
Step 2:
Combine the ⅓ cup of melted virgin coconut oil, the 1 cup of room temperature coconut milk, and the 3 tablespoons of granulated sugar. Whisk together to combine.
Step 3:
Add 2 eggs and whisk until completely combined. Then, add 1 cup of flour, 1 and 1/2 tsp of baking powder, and a pinch of salt over the wet ingredients and whisk.
Make sure there are no clumps of flour left in the batter, you may have to whisk for 1 to 2 minutes to ensure that everything is well incorporated.
Step 4:
Pour about 3/4 of the way into the mini muffin cups, and sprinkle a little bit of shredded coconut over the top of each one.
Then, put it into the oven for about 15 minutes if you are doing mini muffins and about 18 minutes if you are doing regular-sized muffins.
When they are done, use a toothpick to determine that they have cooked all the way through. Let them cool completely and then you can put them into a container to store.
These muffins turned out so amazing, I’ve never tried a recipe completely focused on highlighting the flavors of coconut, but this one did not disappoint.
This is definitely a must-try recipe and a recommended addition to muffin ideas for breakfast.
