No matter which way you prefer, these banana granola muffins are sure to be a fan favorite among guests and family.

With only ten steps, you can make enough muffins for your guests to enjoy. Or, if you prefer to make them for the week ahead, they are sure to last until need to make them again.

Now, it is important to remember to follow the recipe exactly. We have some close calls with recipes not turning out right when not looking at how each ingredient is prepared. 

Sure the end result turns out fine, but when the ingredients aren’t properly set up, then they don’t evenly distribute in the batter. 

This means you could be getting a bite full of pure butter or banana. While it may sound good, one weird taste could throw off the balance of the WHOLE muffin and its flavor. Better to be safe.

Moving on to the next order of business, your materials.

For this recipe, you will need:

2 Mixing Bowls

2 small bowls (one for the eggs and one for the butter)

1 Whisk

1 Spoon Spatula

1 Potato Masher (for the bananas)

1 large spoon

Measuring Cups

Cooking Spray

Mini Muffin Pan and/or Regular Muffin Pan

We used two 12-cup mini muffin pans and one regular muffin pan for another three-and-a-half larger banana granola muffins. If you are looking for either of these materials, there are links below for the pans we recommend.

The material is sturdy and will last a long time!

For a regular-sized muffin pan, these NonStick Round Muffin Baking Pan from Amazon are great for this recipe as well.

Both pans use the same material, which cleans easily and doesn’t make a mess while baking. If you don’t want to use these, a silicon tray with muffin cups could be a good alternative.

These are all great options if you need any of the baking materials listed above. If you do not, then we can move right on to the ingredients.

*Please note that we suggest setting up or laying out all of the ingredients and materials you before you proceed to mix things together.*

The ingredients you will need for this recipe are:

2 ¼ cups of wheat flour

¾ teaspoon of baking soda

½ teaspoon of salt

3 overripe and bruised bananas-

The darker your bananas are, the better. The bruises bring out the sugars in each spot, so bruised bananas are sweeter and will taste better in baked goods.

¾ cup of agave syrup-

We used agave syrup for these banana granola muffins, but you can use other syrup, like maple syrup if you have that at home or prefer it.

2 large eggs

6 tablespoons of butter

1 teaspoon of vanilla extract

1 ½ cups of granola (your choice of granola)

Once you have located and set out your ingredients, we can move on to the steps!

Step 1:

Preheat your oven to 350 degrees. Spray mini muffin pans or regular muffin pans with cooking spray and set them off to the side. 

*If you are expecting that this recipe may take long, you can wait a couple of steps before preheating your oven.*

Step 2:

In a small bowl, place 6 tablespoons of butter and put into the microwave to melt. (About 30-45 seconds.) Once that has been fully melted, set aside to cool. In another small bowl, crack 2 large eggs and mix until beaten lightly, then put aside.

Step 3:

In a large bowl, whisk together the 2 ¼ cups of wheat flour, ¾ teaspoon of baking soda, and 1.2 teaspoon of salt. Just mix until incorporated, this should only take a couple of seconds.

Step 4:

In a medium-sized bowl, mash 3 overripe bananas well until there are no chunks standing out from the rest of the compound.

Step 5: 

After fully mashed, add the ¾ cup of agave syrup or whatever you like to use, 2 large eggs beaten lightly, 6 tablespoons of butter that have melted and cooled, and 1 teaspoon of vanilla extract.

Mix well until everything has been evenly distributed.

*This would be the best time to preheat your oven if you haven’t already. It will give it enough time to get to 350 degrees by the time you are done preparing the muffin batter.*

Step 6:

Pour half of the banana batter into the dry batter, and fold it together. Once it has been mostly folded, add the second half of the banana batter and repeat the process. 

Then, add the cup of granola and mix that in until it has been properly dispersed.

Step 7:

Use a large spoon to scoop the batter into the muffin pan cups. Then use the spoon to flatten the batter into the cups. 

Step 8:

Sprinkle the last ½ of a cup of granola onto the top of the muffins. Then put into the oven for 15-16 minutes.

*Now would be the best time to wash and clean your dirty dishes!*

Step 9:

Once the timer is up, pull the muffin pans out of the oven and use a toothpick to ensure they are fully baked through. Set them away from the ocean to cool for 7 minutes.

Step 10:

Enjoy!
