If you are looking for a new pair of easy healthy breakfast recipes, and even if you’re not, this may be exactly what you need!

It tastes like a spin-off of peanut butter and banana toast, and it’s high in protein.

I have to say, this may be one of my favorite recipes so far. It only took me about twenty minutes and the contrast of temperatures made it even better.

There are tons of different things you can add to these recipes too, so the possibilities are endless!

This post is all about easy healthy breakfast recipes.

Looking for a healthy version of one of the most classic breakfasts ever? You’re in the right place.

With no added sugar, these banana pancakes with peanut butter Greek yogurt are great recipes to add to anyone who is trying to start eating healthy but finds themself being super picky and not enjoying most of the foods they try.

Or, if you have kids and want them to be eating healthier, they will love these breakfast recipes!

And just like many of the other recipes on this blog, there are alternatives for any allergies that may come up when looking over the ingredients.

This is one of the best easy healthy breakfast recipes if you have twenty or so minutes to spare while you are grabbing things on the way out or waiting for your kids to finish getting ready for school or wherever they need to be.

They can be stored in the fridge or the freezer, then heated up if you need something even quicker, but they will definitely taste the best when fresh.

As for the yogurt, you can also make it beforehand and then keep it in a container in the fridge, it is easier to make ahead of time if you really need to. Both products can last for a while so there won’t be much difference in taste if you mix them at that moment or days before.

The peanut butter and Greek yogurt spread is also really good as an alternative to butter or plain peanut butter on other foods like toast or a bagel as well.

The Greek yogurt adds even more protein for those of you who may have fitness goals that involve bulking up or adding more protein to your diet than usual.

It works well for kids that are growing and need more protein too, as a quick breakfast that tastes good and that they will eat.

Both of these easy healthy breakfast recipes are high in protein so you can pair them together for the ultimate combination or make them separately and use something else to complement them.

Moving on to the first recipe, the banana pancakes, there are only a couple of super important kitchen utensils and gadgets that you may need.

Along with using as few ingredients as possible, this recipe also strives to make the smallest amount of dishes possible, so you don’t have a mountain’s worth of dishes to clean afterward.

In order to get the most out of this recipe, here are some tips that you may want to keep in mind:

Tip 1:

Using a fork to mash the bananas works just as well as using any other masher. However, forks are typically more accessible, and you have more control.

By putting the bananas in the bowl first, you can mash them right away instead of having to set them aside in another bowl so you can add other ingredients beforehand.

Tip 2:

Adding extra flour will make the pancake batter thicker, which can create a denser texture. If you add too much flour, you can even out the consistency by adding another egg or a tiny bit of water.

Tip 3:

To ensure that your pancake is fully cooked through, make sure both sides turn a light golden brown color. You may also want to cut it in half if you think that it will still need more time on the heat.

Banana Pancakes cook differently than normal pancakes so if you are unsure if you will be able to fully cook it through, keep the heat on a lower setting, so it can cook evenly.

They may also appear to be more moist on the inside, this is just due to the amount of banana and egg, but it does not mean that the pancake is not fully cooked through.

Tip 4:

When mixing the Greek yogurt and peanut butter together, the consistency can get slightly messy due to the thickness of the peanut butter.

You will want to keep the mixture in the same bowl and can dip pieces of the banana pancake into it, kind of like chips and guacamole.

Tip 5:

If you want to make the peanut butter Greek yogurt mixture to eat by itself, then try adding only half of a spoonful of peanut butter for a thinner consistency.

It will be easier to eat plain, and then you can add any toppings you would like without the thick texture that may make it harder to eat.

This is what you’ll need to prepare:

A medium-sized bowl

A fork

A small bowl

Measuring cups

A pan

A spatula

This covers both recipes and limits any extra waste that could be created by using more dishes.

For the banana pancakes, you will need:

2 Bananas

2 Eggs

¼ cup of Whole Wheat Flour

Cinnamon

Salt

The cinnamon is optional, but it will add an extra special touch of flavor to the banana.

Step 1:

In a medium-sized bowl, mash two bananas using a fork until the large chunks are gone and only smaller clumps remain.

Step 2:

Add one egg at a time, whisking with a fork until well combined.

Step 3:

Pour in the ¼ cup of whole wheat flour and mix together using the fork. You can also use white flour if that is easier, but whole wheat is the healthy alternative that I recommend.

Add a pinch of salt and a dash of cinnamon to the batter.

Step 4:

On medium heat, pour half of the pancake batter into the pan and wait about five minutes or until bubbles start to form on the surface of the batter and the edges for a protective layer.

Using the spatula, flip the pancake over and cook for another five minutes or until golden brown.

Repeat when the other half of the pancake batter.

In the meantime, while the pancakes are cooking, you can make the peanut butter Greek yogurt!

Now, the name is exactly what it suggests, this recipe only takes two ingredients.

All you need is:

½ cup of Greek yogurt

A spoonful of Peanut Butter

The process is only one step as well!

If you happen to have an allergic restriction to peanut butter, you can replace the ingredient with any nut butter of your choice. The alternative will not have any effect on the recipe.

Step 1:

In a small bowl, mix a  ½ cup of Greek yogurt with a spoonful of peanut butter. Mix until well combined.

You can either spread this on top of the banana pancakes or you can choose to eat them separately.

Together the two recipes make for a delicious banana and peanut butter combo that tastes super fresh with a slight bit of tanginess from the Greek yogurt.

If you choose to keep it separate from the pancakes, you can add toppings to the mixture to create a protein-filled dessert or snack.

Having trouble thinking of toppings to include? For a sweet and savory combo, sprinkle shaved almonds and chocolate chips and mix.

Just like bananas and peanut butter, chocolate chips and peanut butter is an iconic combination!

While these aren’t the quickest easy healthy breakfast recipes if you’re looking for something you can grab and go, they are pretty easy to make as a warm meal.

And you technically could make them beforehand, so you can grab them while you’re heading out the door.

These easy healthy breakfast recipes are a great source of protein and taste amazing without any overpowering flavors that would make it taste like pure protein.

As a picky person myself who loves peanut butter and banana-flavored foods, this was a huge hit!
