This post is all about 5 dinner ideas for summer nights.

What do you think about when thinking about what you want for dinner? Is it a specific flavor or combination? Or maybe what is easiest to make and serve?

Whatever it may be, these dinner ideas for summer nights will check off multiple of your boxes, whether you’re looking for something quick and easy or tasty and plentiful.

There are tons of great recipes out there, but these are my top 5 favorite dinners to make during the warmer season.

I’m not quite sure what it is about these flavors that make summer feel more tangible, but these are the 5 dinner ideas that I would recommend to anyone unsure of what to eat.

In case you’re worried about making a balanced meal, rest assured that the dishes being recommended have a main and side dish to hit most if not all of the main food groups that will keep your stomach happy.

And feel free to add your own ingredients as well if they’re is something you feel is missing that you want to add or substitute for to meet your needs.

These dinner ideas for Summer Nights will give you a good base to go off of if you want to make any adjustments, but they are also so if you are making them for guests, there is nothing specific that may be disliked.

Summer is the best time to see friends and family and just take a break from your normal routine so remember to take a step back and enjoy your surroundings. Whether you’re eating dinner or not.

With all of that out of the way, let’s get into it!

Kale Salad and Chicken Alfredo

For when you need something heavier that won’t take up a bunch of time to make, kale salad with chicken fettuccine alfredo is perfect.

You can make your own sauce and pasta from scratch, or buy it premade from the store. There are some really great premade options at Costco if you can get them, and that goes for the kale salad too.

All you need to do is boil some water, cook the pasta, heat up the sauce, and cut up some chicken. For the kale salad, my favorite way to make it is by using a poppyseed dressing with sunflower seeds and cranberries on top.

You can of course make it any way you like but the premade ones from Costco come with those ingredients ready to assemble, so it works out easily to just throw everything together.

If you don’t tend to gravitate to sweet things in your salad, you may not enjoy this one as much, so you can replace it with another salad you prefer.

At the moment, I have been using precooked fettuccine pasta with kale salad, and making my own alfredo sauce, which has been turning out absolutely delicious.

Here is the recipe I have been using, and highly recommend: Best Homemade Alfredo Sauce by The Salty Marshmallow.

It is super easy to make and you can whip it up while waiting for the water to boil and the noodles to cook!

Barbecued Chicken and Roasted Potatoes

If you know how to barbecue, and even if you don’t know how to barbecue, marinated barbecued/baked chicken is a classic dinner food to eat during the summer.

It’s just one of those meals that you visualize when you imagine eating during your summer break, either with your family or friends during a get-together.

Barbecued chicken is the best, but if you don’t know how to barbecue, you can still get a similar flavor by marinating chicken for several hours.

Now, this may not sound the most appealing at first, but let me tell you that it is 100% worth it. If you can prepare the chicken at the beginning of the week, by the time you want it, it will be ready to make.

Now turning attention to the roasted potatoes, you can do this a couple of ways. Over the barbecue, in the oven, on the stove, or in an air fryer.

For a crispy texture, using an air fryer is my favorite method. That, and the whole process of making it from start to finish is simple and doesn’t make a mess with dishes.

I typically sprinkle olive oil and garlic salt over some sliced potatoes, toss it all together, and then fry in the air fryer for 15 minutes or so. You can make them as crispy as you would like.

Grilled Pizza

I don’t know about you, but just writing this one out made my mouth water. Making pizzas is always a fun experience, and it doesn’t take very long once you have assembled the ingredients.

If you use a pizza stone, it will take even less time to cook in the oven and you can eat within 20 minutes of preparing your pizza-making station.

For making it from scratch, it is easiest to do this when there are only a couple of people, and everyone can contribute to a large pizza or make their own smaller version.

Not saying that doing this with a large group is out of the question, but you may have a hard time keeping everyone involved if you’re only making one or two pizzas.

There are also super easy premade pizzas that you can buy from the store if you still want to have the pizza without putting in the work of making it. The alternative to that would be buying the dough and ingredients, than assembling yourself.

As someone who has tried all three methods, the homemade is by far the best, but it’s pizza. You can’t really go wrong.

Just do whatever works for you and the company you have.

Chicken Salad/Sandwiches

Okay, if you like the ingredients of the other dinner ideas for summer nights but are not quite convinced by the recipes, maybe a chicken salad or a chicken sandwich will win you over.

This would be a great dinner idea if you are craving something fresh and don’t have a lot of time to make something extravagant, or as a healthier alternative to a heavier meal.

If you have all of the ingredients ready beforehand, you can also leave them separate and have everyone Assemble what they want or you can keep it so you can use it in the following days.

On the chance that you don’t have or don’t like chicken, you can also use turkey, roast beef, ham, or really any other sandwich meat. It may taste even better in a salad if you go that route.

Hamburgers

Hamburgers are another classic summer dinner idea that is perfect for any amount of guests.  They are super easy to make and everyone can personalize them as much as they want.

Just put a bunch of different toppings like onions, tomatoes, cheese, and lettuce, and catch up and let everyone else assemble from there.

This is a true party saver if you have a bunch of people coming over and don’t know what food people like because they can just pick whatever they want and they are guaranteed to like it.

For those that prefer not to eat beef or me in general, you can have options for a turkey burger, or you can make an impossible burger.

There are always options so everyone can end up happy with what they get to make their food with.

All five of these dinner ideas for summer nights are so perfect, that you could make them back to back and have your whole week’s meal plan done for you.

For example, if you start with barbecuing chicken, you can use it for a chicken salad or chicken sandwich and then add it to the chicken alfredo.

The grilled pizza and hamburgers can go towards the end of the week when you don’t want to spend as much time on making dinner and just want to relax.

Or you can choose one that you like and possibly come back later to use a different dinner idea for summer nights.
